Welcome to The World Famous Sink – Boulder’s oldest bar and restaurant. 

The Sink belongs to the millions of guests who have passed through our door looking for dinner or lunch in Boulder, CO. We’ve welcomed countless University of Colorado students and alumni, and have been a locals’ favorite since 1923. Whether you’re craving a good Boulder dinner or a quick soup and salad at lunch, this is where the locals gather.

We choose products from local farms and businesses to support our neighbors in our local economy, and to create a fresher, more flavorful product. Eat local and help us reduce our carbon emissions.


The Sink is many things to many people – a last bastion of Old Boulder, a collection of memories from their college days, a Tuesday tradition for pizza lovers, the spot where they met their college sweetheart, a museum of quirky artwork, one of the best restaurants in Boulder CO – the list goes on and on! From the iconic ceiling that captures generations of graduates to the celebrities who have crossed it off their Boulder to-do list, The Sink is a favorite stop for locals and visitors alike.

Appetizers

“BUFF” WINGS

Fresh chicken wings that we brine, dry-rub, bake and then flash-fry to order. Your choice of Buffalo, Honey BBQ or Honey Sriracha. Served with ranch or bleu cheese dressing.

STUFFED JALAPEÑOS

Our fresh take on jalapeno poppers. Baked jalapenos filled with bacon, cream cheese, and spices. Ask for a side of buttermilk ranch or blue cheese dressing for .50 if you need to tame the heat!

SINK NACHOS

Local, organic tortilla chips topped with a house blend cheddar and Monterey jack cheeses, tomatoes, black olives and fresh jalapenos with our house-made salsa.

CHICKEN TENDERS

Buttermilk brined chicken tenders coated with crispy panko breadcrumbs and spices. Served with fries and your choice of bleu cheese, honey dijon, or ranch dipping sauce.

BEET HUMMUS

Roasted beets blended with chickpeas, lemon, tahini, and roasted garlic. Served with pita chips, yogurt, gremolata, cucumber and a salad of radishes, arugula, fresh tarragon, blue cheese, and sherry vinaigrette.

BAVARIAN SOFT PRETZEL

Jumbo, old-world Bavarian-style soft pretzel served with house-made Fresno pepper jam, beer mustard, and queso.

CHEESY BREAD

Choose from our sesame white or honey wheat dough brushed with garlic oil and spices then topped with mozzarella and cheddar jack cheeses. Served with marinara sauce.

Organic romaine lettuce dressed with our caesar dressing, topped with croutons, parmesan and pecorino romano.

A simply and satisfing salad of our house blend of organic greens, carrots, cucumbers, cherry tomatoes, radish and croutons.

Grilled and glazed teriyaki salmon with mixed greens, ginger lime vinaigrette, carrots, cucumber, radish, green onions, fried wontons.

BEETROOT SALAD

Roasted beets with our house blend of organic greens with red onions, oranges, Haystack Mountain goat cheese and toasted almonds tossed in sherry vinaigrette.

QUINOA SALAD

Red organic quinoa with mixed greens, red onion, cucumber, carrot, radish and tossed with a pistachio vinaigrette, topped toasted almonds.

“Sandwiches”

COWBOY REUBEN

Featured on The Food Network! An overnight marinade and a ten-hour smoke give this brisket its deep flavor. A twist on the classic with super slaw, cheddar cheese and Texas Chipotle BBQ sauce on rye bread.

CLASSIC REUBEN

A true deli classic of tender, slow cooked corned beef on grilled rye bread with melted Swiss cheese, sauerkraut and 1000 island dressing.

MESA CHICKEN

A Sink classic of blackened chicken breast topped with bacon, buff sauce, guacamole, provolone, tomato and lettuce on a ciabatta bun.

PORTOBELLO CLUB

Roasted portobello on a ciabatta bun with smoky tomato aioli, tempeh bacon, arugula and cucumber-pepper slaw.

BLACKENED SALMON

Sockeye salmon coated in Creole seasoning with red cabbage slaw, arugula, tomato, and roasted garlic aioli on a sesame seed bun.

P.O.T.U.S

To honor a visit from The 44th President of the United States who ordered this pizza to-go and paid from his own wallet! Pepperoni, Italian sausage, green peppers, black olives, red onion, and mozzarella.

THE FRESHIE

A sink classic with a new twist! Garlic and herb seasoned crust with our pesto-based Freshie sauce, sliced tomatoes, roasted garlic, and hand stretched mozzarella. Finished with arugula and balsamic reduction.

BLANCA

This is our take on a white pizza. We start by brushing the crust with garlic oil and top it with fresh spinach, roasted garlic, bacon, mozzarella, ricotta, provolone and freshly grated pecorino romano.

BBQ CHICKEN

A base of our signature Sink Hickory barbeque sauce topped with spicy chicken, bacon, red onion, roasted red pepper, cilantro, shredded mozzarella, and cheddar jack cheeses.

PIZZA MARGHERITA

This is the pizza that, like no other, defines “pizza” in hearts and minds. It was famously named for Queen Margherita after she visited Naples on June 9, 1889, and was served this pizza by the pizzaiolo Raffaele Esposito and his wife, Rosa Brandi. Classic red sauce spread thinly then topped with tomatoes, hand-stretched mozzarella, and basil.

Sink Burgers

We offer grass-fed beef because it is healthier to eat, hormone and antibiotic free, and grain-free. It’s leaner, higher in Omega-3, vitamins A&E, environmentally friendly and never frozen.

Our standard burgers are 7 oz. of Choice Colorado Ground Chuck served with your choice of creole spiced fries or coleslaw, or one of our upgraded sides..

ROSA’S VEGGIE BURGER

Hearty, house made veggie burgers made with rice, lentils, roasted peppers, spinach and oats. We top it with Haystack Mountain goat cheese, avocado and smoky tomato aioli.

TEXAS ONION STRAW

This DDD-featured item has big flavor from the cheddar and provolone cheeses, fresh jalapeño, chipotle aioli and crispy onion straws.

Vintage Menus from 1943 and Beyond

 

From the Beginning

The Sink has been known for generations to have the best burger in Boulder. With a 95-year history of creating such popular American fare, you might be interested in what else we’ve been serving over the years. Take a look at these vintage menus from different chapters in Sink history.

Residing on “The Hill,” a university neighborhood, you can tell a lot about CU’s evolving culture by taking a look at these vintage menus.

The Sink’s food and bar menus are a reflection of our taste in food and drinks, how we enjoyed ourselves, along with our local economy at different points in time.

Even though some of the dates are unknown, it’s not hard to place the menus in the correct decade by looking at the prices.

A Little History…

Boulder’s Most Elite Drinking Establishment

 

The 18th Amendment of the U.S. Constitution took effect in 1920, establishing the prohibition of intoxicating liquors. In 1933, The “Beer Act” raised the alcoholic percentage to 3.2.

 

The rousing student scene of drinking began in 1950 when The Sink was the first bar on “The Hill” to serve 3.2 beer, the second being the historic music venue, Tulagi (formerly The Anchorage).

 

Except for 3.2 beer, Boulder remained “dry” until 1967 – a whopping 60 years!

 

     “In the early ’70s, The Sink was a beer bar, so anyone over 18 could get in. That included the whole student body at CU, so it was one of the mainstays. There weren’t so many liquor licenses at the time either.” ~Chris Heinritz, Owner

In 1989, The Sink installed it’s first “full bar.”

 

Part of the early marketing concept was to incorporate the fun and sometimes risqué, cartoons reflecting the artwork covering the restaurant’s walls.

 

The addition of 18 draft lines and a much-needed upgrade to the kitchen happened in the summer of 1995. Fun Fact: The Sink was one of the first locations in Colorado to have New Belgium’s Fat Tire on tap!

In the late 50s, Floyd Marks and Herbie Kauvar introduced the now famous Sinkburger and its signature Sink Hickory Sauce. Enjoyed by generations, this popular burger has lasted through Herbie’s Deli and the many phases of The Sink. What makes this burger so special?

The Ugly Crust Pizza

 

When Chris and Mark Heinritz purchased The Sink in the early ’90s, they got creative and introduced the Ugly Crust Pizza to the menu. “Ugly” is used as a term of endearment describing the thick, floppy crust that borders every pie. Because The Sink was known to having the best burger in Boulder for decades, they wanted to create a new and memorable dish. The most popular being the famed vegetarian pizza – Buddha Basil Pie. (see below) 

 

Locals Tip: “Don’t forget to top your crust with honey for dessert!” Yum!

Newer Menus

 

The Heinritz brothers purchased The Sink in 1992. Without changing its legacy, the menu has continued to evolve with the times. Mark and Chris have made a point to put quality and consistency first. They’ve added award-winning and unique items to the menus while keeping the signature favorites. This method has been successful to the point where television networks such as Diner’s, Drive-Ins and Dives and The Travel Channel have taken notice. The Sink incorporates local and sustainable practices whenever possible such as grass-fed beef, composting, and wind-power.
